Definitely do the Friday tour, book it well in advance though.
Try and get to go on a brewery tour. This has to be the leading must-see brewery in The States!

Go on the tour. It's fantastic!
As far as brewery tours go, this is one of my favorite. Have to book several weeks in advance (and do a weekday) but hey a day off to be with beer is a day well spent.
